Subtleties in preparing dietary mimosa

This bright salad appeared quite recently, in the 70s. This has led to the fact that the recipe for the dish contains the most affordable ingredients.

And yet, after all this time, it remains relevant today. However, to make the snack really tasty, you will need to take into account all the features and secrets of the process.

The main nuance in its preparation is the temperature of the components used in it. It must be identical.

This effect can be achieved by placing the food in the refrigerator for 30 minutes. This subtlety will help all layers become neat.

When selecting fish, first of all you should pay attention to marine species: mackerel, horse mackerel, tuna and pink salmon.

A small modernization of recipes can turn a classic high-calorie recipe into an affordable light dish for everyday life and holidays. To do this you should:

  • eliminate butter from the recipe;
  • replace with another low-calorie sauce;
  • instead of canned fish in oil, buy tuna canned in water;
  • make a layer of salad not from boiled, but from raw carrots;
  • exclude potatoes; they can be replaced with an apple.

It doesn't hurt to pay attention to boiling the eggs. It should last no more than 10 minutes, since further cooking will lead to a greenish tint to the egg yolk.

Considering that it is the final accord of the salad, its color should retain a bright yellow hue.

This pp salad with tuna, tomatoes, green beans and egg is an excellent example of how tasty and varied a pp menu can be.

Nutritional value per 100 g:

  1. Calories: 124
  2. Proteins: 10
  3. Fats 9
  4. Carbohydrates: 1,5

  • tomatoes - 1 large or 4 cherry
  • boiled eggs - 2 chicken or 6 quail
  • green beans - 100 g
  • olives - 5-6 pcs.
  • anchovies - 4-5 pcs.
for refueling:
  • lemon juice - 1 tsp.

Boil green beans in salted water with a drop of lemon juice - 7 minutes after boiling. If you have, then there are 3 options: boil the raw frozen one as well as fresh, blanched - 3 minutes after boiling, already cooked - 1 minute.
  2. Now we’ll make the dressing by blending all the ingredients in a blender until the color changes (it should become opaque and yellowish). Attention! The presence of mustard (precisely in powder) is important for consistency. In the original, you can take the usual ready-made one, but sometimes there is a lot of sugar, vinegar and other unnecessary additives.
  3. Everything is ready, you can assemble the Nicoise. Place coarsely torn lettuce leaves on a large flat plate and sprinkle with a little sauce.
  4. Next - boiled and cooled beans. A little sauce again.
  5. In the center - all the tuna. Around it are randomly chopped large tomatoes and slices of eggs.
  6. Top with olive rings and anchovies. The final chord is the remaining sauce.

The traditional version also has potatoes, but I like it better without them, the flavors are brighter. Niçoise, by the way, is also prepared with regular beans; it can generally be classified as a bean salad, a selection of which.

The best thing about it is that this salad is incredibly easy to prepare, and therefore anyone can handle it, regardless of their level of culinary skill.

Step-by-step recipe for classic mimosa with tuna

In terms of popularity, the classic mimosa in our country can only be rivaled by the Shuba salad, which has long become a kind of calling card of modern Russian cuisine. However, most often, hardworking housewives cook both of these dishes for a major holiday.

Using this recipe for an unusually smooth traditional tuna mimosa, you can prepare a similar salad appetizer like never before.

The Atlantic fish itself has a mild taste, but the correct assembly of the salad will emphasize this feature even more.

Ingredients

  • Canned tuna in oil – 1 can;
  • Carrots – 3 pcs.;
  • Potatoes – 2 medium-sized tubers;
  • Salad onions (onion allowed) – 1-2 pcs.;
  • Hard cheese – 200 g;
  • Chicken eggs – 5 pcs.;
  • Mayonnaise sauce “Light” – 300 g;
  • Fresh greens - a bunch.

How to make a delicious mimosa salad with tuna at home

Before we begin to describe the process of preparing this wonderful dish, we should say a few words about the choice of dishes for serving.

Traditionally, mimosa is served in a round transparent salad bowl - thanks to this, all the layers are clearly visible and the food becomes even more elegant and festive, as if from a photo from a cookbook.

  1. We'll start by properly preparing chicken eggs for our salad. They need to be boiled, but this must be done correctly. Wash the eggs, place them in a small saucepan and fill it with cold water.
  2. Place the dishes on high heat and add a little salt to the water to maintain the integrity of the shell. When the water boils, reduce the heat and set aside for 10 minutes. Eggs should not be overcooked, as the yolk will turn grayish in color, which will ruin the entire appearance of the salad.
  3. Transfer the boiled eggs to a container with cold water, after which we peel off the shells.
  4. At the same time, you need to boil vegetables - potatoes and carrots. We recommend boiling them without the peel, but cooking them directly “in their uniform” is also allowed.
  5. Open the can of tuna and transfer its contents to a small bowl. Here you need to crush the fish a little with a fork. Please note that there is no need to drain the oil.
  6. We clean the salad onion and cut it into small, small cubes. If you don’t have this type of vegetable on hand, then use onion, but first pour boiling water over it for 10 minutes so that it loses its bitterness.
  7. Divide the eggs into yolks and whites, three of them separately on a fine grater.
  8. We chop the vegetables in the same way and do the same with the cheese.
  9. We put grated potatoes on the bottom of our salad bowl; if desired, you can add a little salt and pepper. Shredded tuna is spread over it. Lubricate everything with mayonnaise on top.
  10. Then lay out the whites, carrots and coat with sauce again.
  11. Cover with chopped onion, grated cheese and cover everything with the last layer of mayonnaise. We sprinkle it with egg yolks and finely chopped fresh herbs.

This home-style mimosa is best served not immediately, but after it has been left in the refrigerator for a couple of hours. This way the layers will be better bonded to each other, and the dressing will saturate them properly.

Cooking an unusual mimosa with tuna and rice step by step

Preparing this variation of salad involves boiling three ingredients at once, so either prepare three pans at once, or prepare the products in stages.

  1. Rinse the rice well until the water becomes clear. The easiest way to do this is to use a colander with small holes. Pour the washed cereal into a pan with a boiling glass of purified water. Add a little salt, cover with a lid, reduce the heat and cook until the moisture is completely absorbed.
  2. We cook the eggs exactly as we did in the first recipe, peel and grate the whites and yolks separately.
  3. We cook the carrots directly “in their uniforms”, not forgetting to wash them first.
  4. Mash the canned tuna with a fork (if you took the fish in its own juice, it is better to drain the water).
  5. Peel the apple, remove the seeds and grate it on a fine grater. We do the same with carrots.
  6. Processed cheese should be grated on a coarse grater.
  7. We clean the onion, cut it into small cubes and pour boiling water for 15 minutes, then drain the water.
  8. Place rice in an even layer on the bottom of the salad bowl, and evenly distribute the canned fish mixture on top of it.
  9. Sprinkle it all with chopped onions and apply a mayonnaise mesh.
  10. Then comes a layer of grated carrots, which we also cover with a little mayonnaise sauce. Add grated apple and mayonnaise again.
  11. Now come chicken squirrels and processed cheese. Coat everything one last time with mayonnaise dressing, sprinkle with grated yolks and chopped fresh herbs.

Like any other mimosa, this one needs to be infused for an hour or two in the refrigerator.
