It exactly coincides with my understanding of proper food: delicious dishes, quality products, simplicity and often speed in preparation. What else is needed for happiness? Right, , which are also prepared in a matter of minutes :) Be sure to look at them, it’s so tasty and simple! But somehow I went off topic...

Italian Frittata is a great quick and tasty breakfast that you can put any filling in, all to your taste. Frittata with zucchini, potatoes, any vegetables, shrimp, and for meat eaters - with ham is very tasty. But its essential ingredient is Parmesan cheese. Without it, the Italian omelette Frittata will no longer be the same. Plus the right cooking technology, and the taste of Italy will appear in your mouth every morning. Another very tasty Mediterranean omelette - , which I already wrote about earlier. They are very similar in preparation, but Tortilla has its own characteristics, read, look, cook it too if you like to experiment. And now... Frittata or Fritata: Italian omelette.

Ingredients

  • - 4 things
  • - 1 handful frozen (can be replaced with other vegetables or seafood)
  • - 1 small piece (can be replaced with other vegetables or seafood)
  • - Parmesan - 30 g or more
  • - 3-4 sprigs (I have dill and parsley)
  • - spices

Cooking method

The Frittata recipe is very simple, as you will see for yourself right now. Place a frying pan with vegetable oil on low heat. Take out a bowl, break eggs into it and beat with a fork. You don’t need to take out the whisk, the consistency should not be perfectly whipped. Now add salt, pepper, add Italian herbs and grate Parmesan cheese. You don’t have to skimp on the Parmesan frittata, the more, the tastier! Mix everything.
Cut the filling into medium-sized pieces. For me these are vegetables: green beans and carrots. By the way, frozen! They fit great too. Add vegetables or seafood to the egg mixture and mix again.
Pour the frittata mixture into the heated frying pan and cover with a lid. We wait for the Frittata to brown on the bottom.
At this time, chop the greens. Here I love dill and parsley, they complement the Italian Frittata well.
When the Frittata or Frittata: Italian Omelette is nicely browned, you need to proceed to the next step. Here we have two options: you can turn the Frittata over with a spatula to the other side or put the Italian omelette in the oven to finish baking. In the next photo I just flipped it over. But remember that the larger the portion, the more difficult it is to flip!

After a few minutes, remove the Italian omelette Frittata from the pan, place it on a plate and sprinkle with herbs.
If there is a lot of Frittata, bake it in a preheated oven to 180 degrees, as in the next photo. The recipe with photos is very easy to explain :)
Remove from the oven after 5 minutes, when the Frittata is also nicely browned on top.
This hearty omelette is best served with a light snack, for example, you can cut tomatoes and arugula, add flaxseeds, salt, pepper, olive oil and balsamic vinegar.
But juicy tomatoes can be replaced with fresh cucumbers at any time. It will turn out delicious too!
Serve ready-made Italian omelette with light salads.
I advise you to experiment with fillings. For example, add a lot of Parmesan cheese and bell pepper.
Then you will get an even more golden brown crust and a very bright, rich cheese taste.
To serve, the Italian omelette Frittata can be cut into 4 parts, or into 2, and even wrapped in a tube.
And don’t forget about greens and light salads!
So, let's summarize.

What is a frittata? Frittata is an omelette that is popular in all regions of Italy. Having become more familiar with Italian cuisine, I was surprised to learn that all my life, it turns out, I have been cooking and eating, and I really love, frittata.

There are many frittata recipes. In fact, it is difficult to talk about specific recipes in this case. Frittata can be prepared with any vegetables and herbs available at home. Mushrooms, leftover meat or ham, and even smoked salmon, mussels, green peas and boiled potatoes are also suitable. In the southern regions of Italy and Malta, frittata is made with pasta; spaghetti is best suited for this purpose.

Italian housewives experiment in a new way every time. Frittata is a dish that is usually not prepared on purpose. A frittata is made when you need to quickly put together something for dinner, while using up all the leftover ingredients in the refrigerator.

You need to start by pouring a couple of tablespoons of olive oil into a frying pan and lightly frying the garlic, chopped into small pieces. The garlic should then be thrown away. Italian cuisine is characterized by the use of garlic in this way.

Next, in this oil with the aroma of garlic, fry the onions, zucchini and generally everything that we are going to put in the omelet. A little secret - vegetables and herbs must be dried before frying, the frittata should not be prepared with an excess of liquid, even tomatoes should be peeled from seeds and placed on a napkin so that they look like they are slightly dried.

Then the whole thing is filled with a beaten egg mixture, to which, in most cases, grated cheese is added. Use a variety of cheese, whatever is on hand. Sometimes there is no cheese at all.

Prepare a frittata on the stove. Sometimes at the end of cooking the omelette is turned over to form a golden brown crust on both sides. Sometimes a half-finished frittata is placed under the grill for a couple of minutes. Sometimes the frittata is finished in the oven, sometimes with more cheese sprinkled on top.

Serve the frittata slightly chilled, cut into portions. However, sometimes such an omelette is prepared immediately in separate portions in a special frying pan, divided into sections.

Happy experiments and bon appetit to everyone!

  • Use a thick-walled frying pan. In thin-walled dishes, food may burn. If you have no choice, line the dish with parchment paper, it will help all the ingredients cook evenly. The best option is a heavy cast iron frying pan. This is a time-tested classic. When it comes to making frittatas, no thin aluminum frying pan can compare with it, even with a non-stick coating. The size of the pan also matters. It should not be too wide so that the eggs do not spread out in a thin layer. If you are using 12 eggs, use a frying pan that is approximately 25cm in diameter.
  • After removing the frittata from the oven, let it sit for a few minutes before cutting into pieces. Immediately after cooking, the dish has a very delicate consistency, and then it becomes denser, and it will be easier to cut it.
  • Do you want to make the taste of your dish more delicate? Then use dairy products - cream, milk, natural yogurt, sour cream. They can turn an ordinary omelet into a delicious creamy pie.
  • All ingredients must be fully cooked before adding to the egg mixture. This is especially true for vegetables. When raw, they will release liquid as they bake, which can make the frittata watery.
  • You can bake the frittata in small portioned frying pans and serve the dish in them. It looks very nice, homey.
  • Frittata should be served with bread, vegetables, kefir, milk or other drinks. If it contains potatoes, milk goes well with it.
  • Foods with a high moisture content are not added to the frittata or are pre-treated. That is why the core with seeds, which contains a lot of liquid, is removed from tomatoes. Zucchini or eggplants need to be fried first to evaporate the moisture.
  • Add salt according to the range of products you use. For example, if you have salty bacon, you need less salt, and if you have bland tomatoes and bell peppers, you need more. Be sure to salt the egg mixture before pouring it into the pan.
  • Use seasonal products. In summer, a frittata should be prepared with fresh tomatoes, and in winter, canned corn, peas, and bacon are suitable. This dish is convenient because you can use anything for it - from pieces of smoked fish to mushrooms and vegetables.
  • Don't let the frittata bake too long. A properly prepared dish has a golden hue, but may be slightly brownish on the sides. If you want a browner surface, sprinkle grated hard cheese over the frittata. In the oven it will melt and turn into a delicious crust. By the way, this is a good way to make a dish more filling if you don’t have sausage or other high-calorie foods on hand.
  • If you have leftover food from yesterday and don't know what to do with it, make a frittata. You can add pasta and smoked meat trimmings to the eggs. In short, everything that is in the refrigerator.

Recipe preparation steps with photos

To prepare a frittata you will need chicken eggs, sausage (can be replaced with sausage, sausage, smoked meats), tomato, potatoes, green peas, herbs, vegetable oil, salt and pepper. For greens, I use dill and green onions, but you can also add parsley and cilantro to taste.

Cut the sausage into slices.

Cut the tomato into four parts, remove the core and seeds. Grind the rest into strips.

Fry the sausage in vegetable oil.

Cut the potatoes into thin half-circles.

Fry the potatoes until done.

Finely chop the greens.

Pour the peas into boiling water without defrosting. Cook for about 10 minutes until completely softened. Then place the peas in a colander and let all the water drain.

Mix all the ingredients for the filling, add a little salt.

This amount of ingredients makes 3-4 servings of omelet.

Grate the cheese on a medium grater, cut the ham and pepper into small cubes, cut the onion into strips, finely chop the garlic and parsley, defrost the broccoli and cut into small pieces. Naturally, peppers, onions and parsley must first be washed and dried, peppers must be peeled from seeds, and garlic must be peeled :)

Beat eggs into a container, pour in cream, salt and pepper to taste, add nutmeg or other seasonings

Beat the eggs with cream a little with a whisk until fluffy foam

Add cheese and...

parsley Mix everything

In a frying pan or in a fireproof dish (I have a small tagine with a diameter of 22 cm), heat the olive oil and fry the garlic over low heat

Once the garlic has browned, add the onion and fry for a couple of minutes.

Then add pepper and simmer everything together for another 2-3 minutes.

ham. Fry everything together over low heat for another 2-3 minutes.

Now carefully pour in the egg-cheese mixture, mix lightly and wait until the omelette begins to set.

As soon as this happens, place the pan in an oven preheated to 180 degrees for 15-20 minutes.

It’s better to serve the frittata right in the frying pan right away, hot and piping hot :)

Or you can cut it into portions and garnish with fresh herbs. Fresh vegetables are a good addition to a frittata. As you can see, this dish is prepared very quickly, but it always turns out aromatic, tasty and satisfying. In addition, frittata is a real flight for creativity and the discovery of new tastes! May your morning be sunny and kind:) Bon appetit!
