Good day to everyone who stopped by to see me!
Once, at a hotel on the Cote d'Azur of France in the city of Menton, wonderful pastries were served for breakfast - apricot puff pastries, we liked them so much, and even with wonderful coffee, that in memory of this vacation, these delicious puff pastries have since become firmly established in our home, especially during apricot season. So, I'm telling you.
We need apricots, their quantity depends on how many puffs you want to make.
Apricots need to be washed and dried

Cut into halves

I have one sheet of ready-made puff pastry in the freezer. You can use either yeast dough or yeast-free dough, it turns out equally well. Today I have puff pastry without yeast.

Roll out into a layer, but not too thin

To cut a circle, I will need two glasses, one of a larger diameter, the other of a smaller one, and now you will understand why.

Using a large glass, cut out circles of larger diameter, a multiple of two.

Place half of them on a baking sheet

Then take a glass of smaller diameter

And from the second half of the circles, use a glass of smaller diameter to take out the centers.

Take the egg and mix with a fork

Brush the dough circle with egg, but try not to go beyond the edges of the circle, because if the egg gets on the edge of the circle, it will stick the layers together and prevent the dough from rising well

If the apricots are not sweet enough, you can put half a teaspoon of granulated sugar in the middle of the dough circle.

Place apricot halves on top

and cover with the second circle of dough, which has a hole

Don’t worry about the fact that you have scraps of dough left over, they make wonderful “trinkets” that are no less tasty

I also coat the top with egg, along with the apricot, remembering the warning not to grease the ends of the circles so that the dough rises well in the oven
Sprinkle with granulated sugar if desired

Bake in a preheated oven for 25 minutes, without looking into it for the first 15 minutes so that the dough does not settle.

If desired, you can sprinkle with powdered sugar.

Well, for those who read to the end, help yourself!

It turns out very beautiful and tasty, and most importantly, it reminds you of the beautiful Cote d'Azur of France, and it's also very simple!

Apricot puffs made from ready-made puff pastry are a wonderful light pastry that can be baked all year round. In summer with fresh apricots, in winter with frozen or canned ones. Therefore, you can pamper your family with delicious and aromatic pastries all year round. Absolutely everyone can handle ready-made puff pastry. Therefore, I think no one will have any difficulties. Quick and airy puff pastries will help you out in any situation. They are suitable for home family tea drinking, meeting guests, they can be given to children at school, taken with you to work... They are prepared quickly, but eaten even faster. But to ensure they turn out well, you should consider the following tips when purchasing frozen puff pastry.

  • Check the plastic packaging bag to ensure it is sealed, as... the semi-finished product is sensitive to high humidity and temperature changes.
  • Conscientious manufacturers indicate on the packaging the number of layers in the dough. The more of them, the tastier the baked goods. For yeast-free dough, a good layering indicator is 226 layers, for yeast dough - 36-48 layers.
  • Defrost the dough first in the refrigerator, then at room temperature. At high temperatures, it will quickly become soft and sticky, and the layers will stick together when rolled out.

  • Apricots - 150 g
  • Sugar - 1 tbsp.
  • Butter - 25 g

Step-by-step preparation of puff pastry from ready-made puff pastry with apricots, recipe with photo:

1. Place butter in a frying pan and place on the stove over medium heat. Heat until butter melts.

2. Wash the apricots, cut them in half, remove the pits and place in a frying pan.

3. Add sugar and add vanillin if desired. It would be nice to add a pinch of cinnamon.

4. Over medium heat, caramelize the apricots until the berries are golden brown.

5. Thaw the dough correctly without using a microwave oven and roll it out with a rolling pin. This must be done in one direction so as not to disturb the layering.

6. Cut the dough in half into two parts. This will be two puffs.

7. On one half of the sheet, make cuts in a checkerboard pattern, as shown in the photo.

8. Cover a baking sheet with parchment, grease it with oil if desired, but this is not necessary. Place a sheet of dough on it and place caramelized apricots on an even half.

9. Cover them with the free edge of the dough and pinch the edges well. If desired, brush the puff pastries with milk, butter or egg to create a golden brown crust.

Today again I sing an ode to ready-made puff pastry and whoever decided to sell it in stores! How great it is that you don’t need to fuss with the dough and you can prepare something delicious for tea in 20-25 minutes!!

Apricot puffs are delicious, no, they are VERY tasty, and simple, and aromatic, and... and they need to be prepared urgently!!

Let's prepare all the ingredients for making apricot puffs. Apricots need to be firm. Soft and overripe ones are not suitable!

Remove the puff pastry from the refrigerator and let it soften a little. Then roll it out with a rolling pin into a layer of 2-3 mm.

We will need two glasses of different diameters. Using a glass of larger diameter, cut out circles.

Cut out circles in half of the circles using a smaller glass. The size of the hole in the circle should be slightly larger than the size of the apricot.

We collect pieces of dough, roll it first into a ball, and then roll it out and repeat the previous two steps.

Beat the egg with a fork and brush the dough circles with it using a silicone brush.

Place half a teaspoon of brown sugar in the center of each circle.

Wash the apricots and dry them with paper napkins. Cut in half and remove the seeds.

Place an apricot half, cut side down, on each circle, covering with sugar.

Cover the apricot with the second circle, as in the photo.

My smaller glass still turned out to be quite large in diameter. If you have the opportunity, make the inner circle smaller, then the puff pastries will turn out more beautiful when finished.

Brush the top circle of dough and the apricot with egg.

Place the puff pastries on a baking sheet and place them in an oven preheated to 180 degrees C for 20-25 minutes.

Let the finished apricot puffs cool and sprinkle them with powdered sugar before serving.

Enjoy your tea!

It is believed that the main ingredient in baking is patience! You may not agree with this, because you can bake all sorts of goodies from store-bought dough, for example, puff pastry, which is sold in every major supermarket. We suggest making delicious croissants from ready-made puff pastry, and you can use fresh apricots for the filling.

Ingredients

  • puff pastry – 500g
  • apricots – 300g
  • granulated sugar – 50-100g
  • egg – 1 pc.

How to make croissants from puff pastry

1. Before you start working with the dough, wait for it to defrost. But please note that it should not be put in the microwave or hot water. It is enough to leave it for 15-20 minutes at room temperature and it is ready for use. Roll out the puff pastry into a layer using a rolling pin. If the dough is a little sticky, you can sprinkle it, as well as your rolling pin and board, with flour.

2. Prepare the filling: wash the apricots, remove the seeds, cut the pulp into small slices. By the way, use firm apricots whenever possible.

3. Cut the rolled out dough into triangles, put the filling on each of them, sprinkle it with a small amount of sugar.

4. Next, we wrap small croissants from the cut triangles of puff pastry. The tips can be lightly pressed to close the apricots, or they can be left open so that the filling can be seen in the finished baked goods.

5. Then carefully separate the yolk from the white. We only need the yolk.

6. Rub the yolk with a fork, then brush the croissants with a brush. Thanks to this, the finished baked goods will have a very beautiful and appetizing golden crust.

7. Bake croissants with apricots in the oven for 25-30 minutes at 200°C. If desired, they can be baked in the microwave (but only if it has a baking mode!).

Serve the toasted croissants, garnished with mint and sweet syrup.

Of course, the fastest and easiest way to bake delicious, fluffy and rosy puff pastries with apricots is to buy ready-made frozen puff pastry or yeast dough in the store. But if you spend a little more time and make homemade dough with your own hands, then, of course, the baked goods will turn out much tastier. All you need to please your loved ones with a delicious homemade dessert is time, desire and a good mood.

Puff pastry

In order to prepare the dough, you will need the following ingredients:

  • Butter or margarine for baking - four hundred to five hundred grams.
  • One glass of warm water.
  • You need to take two and a half to three glasses of flour.
  • Salt on the tip of a knife.
  • 9% vinegar - three teaspoons.

Preparing the dough

Add vinegar and salt to a glass of water. Sift the flour and pour the resulting liquid into it. Mix the dough. To make it fluffy and airy, you need to knead it long enough. When the dough becomes soft and elastic and does not stick to your hands or to the table, it should be placed in a plastic or paper bag and placed in the refrigerator for about forty to fifty minutes. This will make it more elastic and roll out better.

While the dough is cooling, you need to knead the butter or margarine. To make the mass homogeneous, pour five or six teaspoons of flour into it and mix everything very well.

Making a flat square. Remove the dough from the refrigerator and roll it out so that the edges are thinner than the middle. Place a layer of butter in the center of the dough and fold the edges into an envelope. Sprinkle with flour and very lightly roll out the dough from the middle to the edges. You should get a square about one and a half to two centimeters thick. Next, fold the dough into quarters and leave it to rest for about thirty to forty minutes. We repeat this process of rolling and folding at least three times.

After this, you can start baking apricot puffs.
