What foods are actually incompatible for human consumption at the same time. What foods cannot be combined

Hello readers of my blog.
Today I want to continue the topic of proper nutrition, which I started in the article.

Also, I have already talked about proper nutrition and the importance of their balance.

Here, I want to tell you about another fact that needs to be taken into account when drawing up our daily menu - the compatibility of products for proper nutrition.

Eating compatible foods will help our body to fully absorb the nutrients of a particular food.

How does this happen?

All food products have a different chemical composition, which, of course, affects their "digestibility" in our body:
this is the time that needs to be spent on digesting a certain group of foods;
these and certain enzymes that process this food.

I will explain this in a little more detail.

There are fast-digesting foods and, accordingly, slowly-digested foods.
If we eat them together, then the food, which must quickly leave our body, will linger longer, the digestion process is disrupted - the food is not digested, but simply simply - rots or wanders!

So, for example, an apple eaten at work ( as a snack) leaves the stomach for half an hour. If we “had a snack” with an apple after potatoes with meat ( digested for more than 4 hours), then it stays with these "slow" products and after 30 minutes it wanders in full.

In addition, for a particular product in the stomach, a different environment is needed. So for meat, an acidic environment is needed, and potatoes are "processed" in an alkaline environment.

The large intestine is also involved. In it, food is "processed" not by our enzymes, but by our microorganisms - bacteria.

Let's conditionally divide them into good and bad.

Good ones they increase our immunity, help us "absorb" vitamins, process fiber, fight bad bacteria, etc.

Bad- these are all sorts of pathogens that are always present in our body. But some even help - they fight our "wrong" food, help it quickly process and remove it from the body.

So - vegetable raw food is processed by our well-wishers - beneficial bacteria, and the more and longer we consume such food, the more and stronger our immunity becomes. And when we interfere with the food - meat with salad, then a war begins in the intestines ( and the consequences are gases) who will win.

Therefore, it is very important for us to know how to combine foods with proper nutrition so that the digestion time, enzymes, etc. more and less matched, while there will be no imbalance in the process of their processing, because this is the basis.

Of course, we do not know what and what is processed in our company, and what is combined with what.

But there was such a doctor, Herbert Shelton, who offered us his table of compatibility of products for proper nutrition.

There are controversial points in this table that modern scientists criticize (we know how they relate to everything that contradicts their dogmas).
Of course, we cannot determine the correctness of all combinations of products, so it's up to you to believe or not.

And further. You can always check with your body, and he will always tell you whether you have chosen the right combination or not.

Food Compatibility for Healthy Nutrition, Shelton Table

Some explanations for the table - food compatibility for proper nutrition

This table contains (vertically and horizontally) foods that we often use in our diet.
A number is assigned to the skin product in the “product name” column, which is duplicated in the row with numbers.

For example, line No. 9 “semi-acidic fruits” and column No. 9 also “semi-acidic fruits”. Their intersection is highlighted in white.

How to use the product combination table

Highlighted color means:
Green cell- compatible products.
Yellow- can be combined.
Red- incompatible products.

For example, let's look at how butter is combined with bread.
Butter - No. 3, bread - No. 7. We look at the intersection of No. 3 with No. 7 - we see green, perfect. That is, these are compatible products.

Decoding some products from the table

No. 8. Tomatoes and sour fruits
These are tomatoes and fruits that have acidity - currants, strawberries, pineapples, pomegranates, strawberries, limes, tangerines, grapefruits and oranges.

No. 9. Semi-acid fruits
These include - quince, grapes, gooseberries and raspberries, blackberries, blueberries, cherries, gooseberries, nectarines and peaches, pears and apples, plums and apricots

No. 10. Sweet fruit
These are figs, bananas, dried fruits, mangoes, persimmons, etc.

No. 11. Non-starchy vegetables
Brussels sprouts, white cabbage and cauliflower, broccoli, parsnips, celery, sorrel, cucumbers, eggplant, lettuce, peppers (sweet), rutabagas.
Seedlings: wheat, barley, alfalfa, etc.

No. 12. Starch vegetables
Artichoke, beans, carrots, corn, peanuts * Jerusalem artichoke, peas, potatoes, pumpkin.
* Peanuts, lentils, legumes and all grains - combine both protein and starch.

How to combine food at the table, 7 rules

1. One kind of protein food at a time
Let it be fish, or chicken fillet - but only one thing.

2. Carbohydrates and Proteins - Do Not Use Together
Protein foods require an acidic environment to digest.

3. Sour and starchy foods should not be eaten together.
Acidic foods neutralize the alkaline environment, which is so necessary for the processing of starch. As a result, in the stomach begins - fermentation, as patients say - "the stomach does not cook."

4. Protein foods and sour fruits cannot be eaten together
Such fruits suppress the secretion of our stomach, which digests protein. And not digested protein is already decomposed by bacteria, and not by enzymes. Which can lead to toxic poisoning.

5. Eat fats and proteins in different meals
Some foods, especially nuts, have more than 50% fat, which takes a long time for our body to process them.

6. Watermelons, melons - eat without anything
These products, in our body, do not combine with anything. Well, it's easy - I think very few people, a melon or a watermelon, eat with something.

7. Eat sweet fruits and protein foods separately.

8. Never drink food with water, tea, juice, etc.

Eh ... favorite sweet tea sandwich ...

The liquid that gets in with food dilutes the gastric juice, makes it less concentrated, as a result of which its "strength" of digestibility decreases. Food is not digested properly, a lot of unprocessed food gets into the intestines and the stomach feels heavy.

If something is not clear, you can watch the video on the topic, everything is perfectly described in it.

Well, for me, that's all for today. I look forward to your comments. Goodbye.

As a rule, they are interested in the compatibility of products when intending to switch to separate meals. In essence, the principle of food compatibility is separate nutrition. For different types of food, our body produces digestive juices of different compositions. If the products are compatible, the composition of these juices is the same, and food is easily absorbed by the body. If the compatibility is not complete, food is difficult to digest, since the body is forced to simultaneously produce juices of different compositions.

The processes of decay and fermentation in the body occur precisely when the compatibility of the products is impaired. Nutrition in such cases disrupts normal digestion and becomes the cause of intoxication.

All products are usually subdivided into 10 groups. Let us list which food compatibility will be permissible during nutrition, and which should be avoided.

Group 1. Sweet fruits

Figs, dates, persimmons, bananas and all dried fruits.

Ideal combinations: with each other, with fermented milk products, with semi-sour fruits.

Allowed combinations: with herbs, milk, nuts, with non-starchy, moderately starchy and starchy vegetables.

When combined with any other products, they provoke fermentation.

All fruits are very beneficial when consumed as a standalone meal. It is always better to drink juices half an hour or an hour before meals. Do not use fruit juices or fruits as a dessert.

Group 2. Semi-acid fruits

Watermelons, apricots, mangoes, blueberries, blueberries, melons.

Sweet on the palate: pears, grapes, apples, peaches, plums, cherries. Tomatoes, by their properties, also belong to this group.

Ideal combinations: with each other, with fermented milk products, with sweet and sour fruits.

Allowed combinations: with non-starchy vegetables, fatty protein products (fatty cheese, cottage cheese, nuts), herbs.

Compounds with other protein products are harmful.

The combination with semi-starchy vegetables and starches provokes fermentation.

Note. Blueberries, bilberries and melon are incompatible with any other product. These fruits are superbly digestible when eaten as a standalone meal rather than in addition to it. Or - in small quantities - an hour before the main meal.

Group 3. Sour fruits

Tangerines, lemons, grapefruits, pomegranates, oranges, pineapples. Sour taste: grapes, apples, cherries, peaches, plums, pears, as well as cranberries, currants, blackberries.

Good combinations: with milk, fermented milk products, semi-sour fruits.

Allowed combinations: with herbs, cheeses, fat cottage cheese, non-starchy vegetables, seeds, nuts. They are incompatible with other protein products.

Invalid combinations: with sweet fruits, semi-starchy vegetables, starches.

Group 4. Non-starchy vegetables

Green beans, cucumbers, bell peppers, cabbage.

Ideal combinations: with fats, starches, moderately starchy vegetables, proteins, herbs.

Allowed combinations: with fruits.

Invalid combinations: with milk.

Group 5. Moderately starchy vegetables

Green peas, beets, zucchini, carrots, pumpkin, seaweed, turnip, eggplant, rutabaga.

Successful combinations: with herbs, fats, non-starchy vegetables, starches.

Allowed combinations: with cottage cheese, seeds, nuts, cheese, fermented milk products.

Harmful combinations: with fruits, proteins, sugars, milk.

Group 6. Starchy foods

Rye, wheat, oats and their products.

Cereals: rice, buckwheat, pearl barley, millet, as well as chestnuts, potatoes.

Ideal combinations:

Allowed combinations: with each other and with fats. However, compounds of different starches with each other should be avoided by people inclined to be overweight. When combining starches with fats, it is also recommended to eat something from non-starchy vegetables or greens.

Not very desirable combinations: with seeds, nuts, cheese.

Very harmful combinations: with any fruits, sugars, milk and animal proteins in general.

Note. Sauerkraut, mushrooms in any form and all other pickles go well with potatoes, and poorly with bread.

Group 7. Protein products

Cheese, eggs, kefir, milk, cottage cheese, yogurt, fish, meat.

Dry beans, peas, beans, pumpkin and sunflower seeds, nuts (except peanuts).

Ideal combinations:

Allowed connections: with moderately starchy vegetables.

Invalid combinations: with starchy foods, sweet fruits, sugars, two types of proteins.

Undesirable combinations: with sour and semi-sour fruits, fats.

Exceptions. Seeds, nuts, cheeses, fatty cottage cheese can be combined with semi-sour and sour berries and fruits.

Milk can be combined with semi-sour and sweet berries and fruits.

Fermented milk products can be combined with sour, semi-sweet and sweet fruits.

Group 8. Greens

Horseradish, Sorrel, radish, nettle, dandelion, onion, sage, lettuce, chicory, plantain, rose petals, acacia, coriander.

With the exception of milk, they can be combined with any food.

Group 9. Fats

Sour cream, vegetable oils, ghee and butter, cream, lard and other animal fats.

Ideal combinations: with herbs, moderately starchy and non-starchy vegetables.

Allowed combinations: with starches. However, in these cases, it is recommended to also consume non-starchy vegetables or herbs.

Harmful combinations: with sugars, fruits, animal proteins.

Group 10. Sugar

Honey, yellow and white sugar, syrups, preserves.

The best way- consume them an hour and a half before meals, separately from other products.

Combinations with fats, starches, proteins provoke fermentation. That is why you cannot eat desserts.

Possible combinations: with non-starchy vegetables, herbs.

Note. Honey is an exception. In small quantities, it can be combined with all foods, with the exception of animal foods.

From the above peculiar compatibility tables, it can be seen that food can be mixed. However, if food compatibility is ignored in mixed meals, the food does more harm than good to the person.

Compatibility of products with each other

It would seem that the combination of tomato and cucumber is a traditional Russian salad.

However, there is a catch. Did you pay attention to the fact that such a salad spoils very quickly?

A tomato is a sour vegetable, while a cucumber is a non-starchy vegetable. They are digested by various enzymes. As a result, one is digested, the second rotts, and gases in the stomach can form from this.

It is better not to give cucumbers with tomatoes in a joint form to children. In general, it is best to remove the skin from tomatoes (it is not digested at all). You can pour boiling water over the tomato and the skin will come off easily.

Ayurveda has a large section, which is called "Compatibility of products with each other." It is very important to know the compatibility of foods with each other, since in the process of joint digestion of incompatible foods, poisons and toxins can arise.

Pay attention to your eating habits and try to get rid of bad ones. For example, often after a meal in a restaurant, we are served fruit for dessert or fruit salad. So, if you eat an apple right after lunch, the process of fermentation and gas formation will occur. So, an apple eaten immediately after eating will be digested in 30 minutes and will begin to rot while all the rest of the food is still being digested.

It is believed that fruits can only be mixed with fruits. And sweet fruits can be mixed only with sweet, sour only with sour. Melon and watermelon don't go well with anything. That is, it is strongly discouraged to end a meal with a watermelon.

Do not mix fruits with vegetables. The only exceptions are 5 fruits: pineapple, dates, pomegranate, raisins and lemon. Only these fruits can be mixed with vegetables.

Cereals are not recommended to be mixed with other grains. The mixtures of cereals and breakfast cereals that are sold in stores like "Seven Cereals" or "5 Cereals" and other mixtures are not useful! They only make you weaker. The fact is that each type of grain is digested at its own time. And the mixture takes even longer to digest. The same can be said about bad eating habits: it is not recommended, for example, to eat porridge with bread, since you are consuming two grains, say rice and wheat. I can say the same about a mixture of black and white rice, which is sold in stores. Do not use this mixture, as they are two different types of grain.

Legumes can be mixed with each other. For example, you can combine beans and lentils.

You can also mix grains with legumes. Cereals and legumes are individually 40% digestible, and cooked together are 80% digestible.

Milk doesn't go well with anything. Remember your childhood: a glass of fresh milk, a crust of bread ... Tasty, but, unfortunately, not healthy. The fact is that milk can be consumed either in the morning or in the evening, and cereals at lunchtime. So, just milk with a crust of bread is not combined in terms of the time of their use.

Lately, a lot of different studies have been carried out, which say that milk is not digested, not absorbed, causes discomfort in the stomach and is generally not useful. So, milk is a specific product, and if it is misused, then, of course, there will be discomfort. Try milk with pickled cucumbers ... Besides, the milk that undergoes such "research" in quotation marks is, as a rule, milk from tetra packets, pasteurized, sterilized or reconstituted from powdered milk. It is difficult to call such a product even milk.

Let us reveal one secret: milk is a blissful sattvic product and people who are in a state of tamas find milk uncomfortable. The body of these people, as a rule, is slagged, clogged with "garbage" from the use of alcohol, meat, tobacco, and is destroyed from an improper lifestyle. Such an organism is unable to accept milk. So, the secret is precisely that if you want to help a person break out of the state of deep tamas, reveal his potential, return love to his life, help get rid of bad addictions, then give him milk. Just do it right. Start with a teaspoon at night, gradually increasing your intake. Mix milk with spices, so it is better absorbed and tastes better. In this case, use natural country milk or the most natural milk. On how to determine whether this milk is good or not, look at the recipe for making paneer cheese, and you will understand what it is about.

Let's summarize: pure milk is a separate product that can only be consumed in the evening (and in the morning). Drinking milk is a separate meal. Various foods that use milk, such as soups or cereals, are separate products in which milk is processed and changed. Such dishes using milk, of course, can be consumed.

Honey and ghee should not be mixed in one dish in a one-to-one ratio. Even though honey and ghee are some of the most valuable foods. These are not just products, but medicinal products. And the dish should give priority to one of these products. By the way, the delivery of medicinal substances into the body with the help of alcohol is considered the most aggressive method of drug delivery. Therefore, in Ayurveda, medicines are mainly made with honey or ghee, without the use of alcohol.

Below we provide a small list of products that are not compatible with each other. Study it and apply this knowledge to your daily diet.

Incompatible:
Milk and bananas, yogurt, eggs, melon, fish, meat, sour fruits, pilaf from rice and legumes, yeast bread;
Melon and grains, starch, fried foods, dairy products;
Yogurt and milk, melon, sour fruits, hot drinks (including tea and coffee), starch, cheese, bananas;
Starches and eggs, bananas, milk, dates;
Honey and an equal amount of ghee (honey is toxic when heated above 40 degrees);
Solanaceous (potatoes, tomatoes, etc.) and yoghurt, milk, melon, cucumbers;
Corn and dates, raisins, bananas;
Lemon and yogurt, milk, cucumbers, tomatoes;
Eggs and milk, meat, yogurt, melon, cheese, fish, bananas;
Radish and milk, bananas, raisins;
Fruit with any other food. Fruits cannot be mixed with other products (including dairy products) - in this case, they cause fermentation, gas formation. Exceptions: pomegranate, pineapple, lemon (lime), dates, raisins (can be mixed with other foods such as vegetables).

An important role for good digestion and reduction of intoxication of the body from the processes of putrefaction and fermentation in the stomach and intestines is played by the correct combination of foods consumed at one time. The fact is that for each type of food, digestive juices of a certain composition are allocated, which contribute to the most efficient digestion of this product. With a mixed diet, such combinations of foods often arise when one type of food interferes with the assimilation of the other.
Herbert Shelton wrote: “We do not get the benefit of food that is not digested. Eating and spoiling food in the digestive tract is a waste of food. But even worse, spoiled food leads to the formation of poisons that are very harmful ... the number of cases of food allergies disappears completely when patients learn to eat food in the right combinations. Such people do not suffer from allergies, but from indigestion. Allergy is a term applied to protein poisoning. Abnormal digestion does not carry nutrients into the bloodstream, but poisons ...
Below is a classification of foods with indications of correct and incorrect combinations. All products are classified into 10 groups.

Instructions for use of the table of compatible products

You should not immediately try to memorize all the acceptable food combinations.
Write down (or remember) all those types of foods that you personally usually eat or use in cooking. And it is within this list that you create your own compatibility "table". If you find that some combinations were incompatible, modify these recipes or food combinations. As a result, you should have a menu that does not differ too much from your usual diet. In the future, it will be easy for you to add new components to it, referring to the main table.

Group 1. Sweet fruits

Bananas, dates, persimmons, figs, all dried fruits.
They are ideally combined with each other (bananas with figs), with semi-sour fruits (persimmon with apple) and with fermented milk products (dates with yogurt).
It can be combined with nuts, milk, moderately starchy and starchy vegetables, herbs and non-starchy vegetables.
When combined with all other foods, it causes fermentation.
Note
All fruits are very healthy when consumed as a separate meal. Do not use fruits and fruit juices as a dessert. It is better to drink juices half an hour - an hour before meals.

Group 2. Semi-acid fruits

Apricots, mangoes, watermelons, melons, blueberries, blueberries;

Allowed in combination with fatty cottage cheese, nuts, seeds, cheeses, herbs and non-starchy vegetables (currants with salad). They are incompatible with other protein products (tangerine with eggs, cranberries with fish).
Incompatible with starches (orange with potatoes), sweet fruits (pineapple with dates) and semi-starchy vegetables (lemon with green peas).

Group 4. Non-starchy vegetables

Cucumbers, cabbage, bell peppers, green beans, etc.
They go well with proteins (meat with cucumbers), fats (cabbage with butter), moderately starchy vegetables (tomato with zucchini), starches (bread with cucumbers), herbs (bell peppers with dill and onions).
It is permissible to combine with fruits.
Cannot be consumed with milk.
Group 5. Moderately starchy vegetables

Ideally combined with herbs (salad with sour cream), with non-starchy vegetables (cucumbers with cream) and moderately starchy vegetables (zucchini with butter).
Combinations with starches (bread and butter) are acceptable, but in this case it is advisable to also use greens or non-starchy vegetables.
Compounds with animal proteins (egg with sour cream), with fruits (apple with sour cream), with sugars (cream with sugar, confectionery) are harmful.

Group 10. Sugar

White and yellow sugar, honey, jam, syrups.
It is best to use it separately from other products, an hour and a half before meals. In combination with proteins, starches and fats, sugars cause fermentation. Therefore, you cannot eat desserts.
In principle, combinations of sugars with herbs and non-starchy vegetables are permissible.
Note
Honey is an exception to the general rule. In moderation, it is compatible with all foods except animal foods.

What is split meals?
All food products are divided into three groups: proteins, plant foods, and carbohydrates. In the gastrointestinal tract, plant foods can digest themselves. Proteins are broken down mainly by acidic reagents. Carbohydrates - alkaline reagents. There are also fats, but they are compatible with both proteins and carbohydrates.

The logic of separate nutrition is to separate the tables into protein and carbohydrate. The carbohydrate table includes foods, the main component of which is carbohydrates (flour, sweet, cereals, potatoes, cereals).
Product classification
The main protein food of animal and plant origin: meat, poultry, fish and all products from them, cottage cheese and dairy products, milk, cheese, eggs, legumes, nuts. Foods rich in starch: bread and all flour products, cereals, potatoes.
Meat, poultry, fish. For all types of meat, a combination with green and non-starchy vegetables is favorable, because this combination neutralizes the harmful properties of animal proteins, helps their digestion and removes excess cholesterol from the blood.
Separate meals in the family
If you want to change the family's eating habits, do so very carefully and not be too harsh on your family members. Do not assume that all the happiness of life lies in separate nutrition. Always admit some kind of alternative. Eating should be healthy, but you don't have to be harsh on others to do so. It is quite possible to first switch to separate nutrition yourself, and by your example, your excellent well-being, inspire the rest of the members ...
Eating a healthy diet is a pleasure.
All food products should be fresh, free of harmful substances and, if possible, remain in their natural form. Less is more - this adage can serve as a guide to a balanced and healthy diet. Here are some basic rules: In an ideal diet, a person gets mostly carbohydrates from vegetables, fruits and foods from whole grains, enough protein and little fat.
Correct Food Combination (by Herbert Shelton)
Never eat carbohydrate and acidic foods in the same meal.
Never eat concentrated protein and concentrated carbohydrate in one meal (meat and noodles, fish and bread, etc.).
Never eat two concentrated proteins at once.
Do not eat fats with proteins (cream with meat, butter with cheese, etc.).
Don't eat acidic fruits with proteins.
Separate meals for those who work in the office
It is especially for those who work in the office that it is often very difficult to adhere to a daily meal schedule. They often do not have enough time to buy fresh food and take something with them to work. As a result, you have to be content with light snacks and convenience foods.
Carbohydrate table
Includes products, the main component of which is carbohydrates (flour, sweet, cereals, potatoes, cereals). This is the so-called energy kitchen. It is digested quickly. carbohydrates and plant foods should form the basis of your daily diet.
Protein table
Includes protein-containing foods (meat, fish, eggs, nuts). For the normal functioning of the body, the presence of proteins is necessary. But with separate meals, they are completely digested, so their number can be minimized.

Eating fresh foods in your diet is an important part of a healthy lifestyle. But no less significant is their correct combination, which many people forget, and some people have never heard of it. In our article we will tell you about the basic rules of separate nutrition.

The very idea of a rational combination of products has existed for a very long time. The ancient Roman physician and philosopher Celsus mentioned an unfavorable combination of foods that were poorly absorbed. He called for the moderate use of everything salty, sweet, fatty, stewed. This issue is also covered in the works of Academician I.P. Pavlova (1849-1936): for each type of food, digestive juices, different in quantity and quality, are allocated. And most fully the problem of the correct combination of food products was considered and substantiated by the American doctor and teacher Herbert Shelton (1895-1985). It was his work that formed the basis of the modern system of separate feeding. The basic tenet of proper nutrition according to Shelton is the statement: "You only need to eat simple, unprocessed food, which is the healthiest diet."

In the process of digestion, the human body secretes enzymes necessary for the digestion of different groups of substances, therefore it is very important to simultaneously consume foods similar in structure, so as not to overstrain the digestive system. There are several groups of substances: proteins, fats, carbohydrates, starches, sugars, acids. And in the process of digestion, they all behave differently. For example, an acidic environment is required for the breakdown of proteins, while an alkaline environment is required for carbohydrates. Therefore, the main purpose of separate nutrition is to help the body tune in to each element. If foods of different nature are simultaneously in the stomach, then their digestion is difficult, and when uncombined foods are consumed, a failure occurs in the body. Poorly digested foods are deposited in the form of fat and waste, and this can lead to weight gain and the development of disease.

Where are ...

... proteins: all nuts and seeds, any grains, legumes (beans, peas), mushrooms, eggs; all animal products (except lard and butter). Eggplant is a vegetable protein.

… carbohydrates: all sweets, sweet fruits, starchy (potatoes), bread, cereals.

... starches: wheat, barley, rye, oats, as well as pumpkin and squash. Moderately starchy foods: cauliflower, root vegetables (turnips, radishes, rutabagas, turnips, carrots, parsnips, etc.).

... sugar: all kinds of sugar, all jams and honey.

... well Ira: all types of vegetable oils, animal fats (butter, ghee, lard, fat sour cream and cream).

Characteristics of fruits and vegetables

Sweet: dried fruits, grapes, persimmons, figs, dates.
Acidic: all types of citrus fruits, sour grapes, apples, plums and tomatoes.
Semi-acid: not dried figs, some varieties of apples, peaches, pears, cherries, strawberries, currants.
Non-starchy and green vegetables: parsley, celery, spinach, sorrel, leek, cabbage, cucumbers, beet and carrot tops, all kinds of onions, bell peppers, eggplant, green peas, asparagus, radish, garlic and others.

Basic rules for combining products

1) Proteins + carbohydrates incompatible combination. They are digested in different ways and, when mixed, they interfere with each other: for the digestion of proteins, the stomach increases the acidity of the juice, which quickly stops the absorption of carbohydrates, which occurs only in an alkaline environment. Therefore, after the simultaneous intake of such products, fermentation begins.

2) Proteins + proteins... Also not a desirable combination. For the digestion of different types of proteins, gastric juices of different acidity are secreted. Therefore, one of the components will not be digested qualitatively or longer than usual. Do not combine meat with eggs, milk with nuts, cheese and meat.

3) Proteins + fats... Any fats inhibit the production of gastric juice. The presence of fats can delay protein digestion by more than two hours. Therefore, do not combine protein with fat. The situation can be saved only by the abundance of greens on the table, which reduces the ability of fats to inhibit secretion.

4) Proteins + starches... Proteins require a very acidic environment to digest, while starches require a little acid to digest. If you mix these types of products, then the breakdown of starches will suffer, since a lot of hydrochloric acid, intended for proteins, is immediately released in the stomach.

5) Proteins + acids... For protein digestion, hydrochloric acid and pepsin are released. But if you eat acidic food along with protein, then the body will produce less pepsin than necessary. That is, the process of digesting proteins will be delayed. This combination causes the process of fermentation and decay of protein foods.

6) Proteins + sugars... Sugars of any kind interfere with the production of gastric juice. Thus, the assimilation of protein foods is inhibited. Don't combine proteins with sugars. Protein, not being digested, is in the stomach for too long, provoking putrefaction processes.

Approx. The following vegetables are combined with proteins: cabbage, root vegetable tops, onions, zucchini, spinach, celery and other vegetables that do not include starch. When consuming protein or starchy foods, green leafy vegetables, seasoned with nothing, are the best supplement. You can add tomatoes, bell peppers, cabbage, radishes to such a salad.

7) Carbohydrates + acids- a bad combination. The acidity of foods destroys the enzyme ptyalin (salivary alpha-amylase), which is necessary for the breakdown of carbohydrates.

8) Carbohydrates + carbohydrates (or starches): You can eat one type of starch or carbohydrate at a time (for example, bread, potatoes with mashed peas and a sweet cake should not be eaten together), since only one type of starch / carbohydrate will be accepted by the stomach for digestion, and the rest will remain intact, delaying the passage of food, which will eventually lead to fermentation.

9) Carbohydrates + Sugars do not match. Traditional pies with jam, sweet cereal and pasta casseroles, cereals, jam and honey on bread or together with cereals and potatoes cause fermentation in the stomach.

10) Starches + acids... This is not a desirable combination, as the acids destroy the starches-digesting substances.

11) Starches + sugars... Digestion of starches begins in the mouth under the influence of saliva enzymes and ends in the stomach. And sugars are only digested in the small intestine. Thus, once they enter the body together, the sugars are retained in the stomach, which causes the fermentation process. Conclusion: porridge cannot be sugared or honey, bread with raisins, prunes or dried apricots should not be put in them.

Approx. Starch does not mix well with other foods. Starchy foods cannot be combined with each other. For example, potatoes and bread are digested differently. Therefore, they will interfere with each other. Starchy food needs to be chewed very well, since saliva processing is important for its absorption. When boiling cereals, do not "smear", let the porridge be dryish - it is healthier. Light vegetables and root vegetables go well with starches. Those enzymes that are present in vegetables contribute to the assimilation of starches. Starches take a long time to digest, it is better to leave such food for lunch. The processing of starches takes at least three hours. A person gets a lot of energy from starches, which can be spent on work in the afternoon.

Peculiarities

Melons are digested in the intestines. If melons enter the body together with other food, then the digestion of melons and other food is inhibited. Therefore, melons are consumed as an independent dish. Due to the fact that the melon (and sometimes watermelon), being eaten with other foods, is poorly digested in the stomach and causes upset, the opinion arose that the melon "weakens". Meanwhile, it cleans the gastrointestinal tract well if eaten separately.

Milk taken as a separate meal. Milk is difficult to digest together with any food, except for sour fruits.

desserts most of them are not wholesome food. They are difficult to digest, inhibit the absorption of other foods. Therefore, it is best to avoid eating desserts. Cold desserts are very harmful. Since the cold interferes with the work of digestive enzymes.

Fruits very useful to combine with nuts. In addition, fruits are well digested together with root crops and vegetables that do not contain starch.

  • Do not mix fruits with other foods.
  • Don't eat fruit as a snack. Make fruit for breakfast or dinner.
  • It is useful to eat fruit half an hour before meals.
  • Sweet and sour fruits should not be mixed. Eat them separately.
  • Those fruits that are ripe in one season go well. You can make a fruit salad with celery.

Food combinations to avoid:

  • fish + rice;
  • chicken + french fries;
  • steak + pasta;
  • ham sandwich;
  • sandwich with cheese;
  • breaded fish;
  • flour-based sauces for meat;
  • nut cakes.
  • ham omelet
  • Omelet with cheese
  • melon + ham
  • melon + bread
  • melon + cake
  • melon + fruit salad

Allowed combinations

  • fish + vegetables;
  • chicken + salad;
  • steak + salad;
  • ham without bread;
  • a slice of cheese without bread;
  • grilled fish;
  • meat with satsebeli sauce;
  • a handful of nuts.
  • omelet with broccoli
  • omelet with vegetables

In order not to get confused in the combination of such a variety of products, you can use the following visual and simplified scheme:

1st group- protein products. Digested in an acidic environment: meat, fish, eggs, legumes, nuts, seeds, eggplants;

2nd group- live products. As a rule, they are used without heat treatment. Contains enzymes for the breakdown of nutrients: greens, fruits, vegetables (except potatoes), berries, dry wine;

3rd group- carbohydrates. Digested in an alkaline environment: sugar, honey, jam, potatoes, bread.

Conditionally compatible groups: 1 + 2, 2 + 3.

So much has been said, what and what cannot be combined, that a completely fair question arises - and what can you eat with what?

Meat, fish, poultry.

The best side dish for meat dishes is salad, spinach, beets, cabbage, asparagus, zucchini, pumpkin, onions, radishes, cucumbers. By the way, we do not recommend a salad of tomatoes and cucumbers (a classic of the genre!): The enzyme ascorbate oxidase is released from the sliced cucumbers, which destroys vitamin C, which tomatoes are rich in.

Potato.

Zucchini and white cabbage go well with boiled and baked potatoes. Seasoning the potatoes with herbs or fried onions is also a healthy option. By the way, it is also better not to season potatoes with oil. Because potatoes are a source of carbohydrates, they have a high glycemic index (which means they raise blood sugar). To lower glucose, the pancreas produces large amounts of insulin, which stimulates the formation of fat cells. And we don't need extra folds on the body.

Cereals. Eat any cereals on the water (buckwheat, millet, rice, oatmeal, barley, etc.) with vegetable salads seasoned with olive oil.

Fruits it is better to eat it separately, two hours after a meal, or 40-60 minutes before a meal. However, in the modern pace of life, it is better to eat fruit for dessert than confectionery. Therefore, the combination of fruits with other products is still acceptable.

Fluid intake either half an hour before a meal, or two hours after a meal.

The combination of cottage cheese and fermented milk products will be harmonious only if homogeneous products with sour milk (cheese, sour cream, feta cheese, etc.) become "partners".

NB! When preparing food, do not forget the golden rule: "The less complex the food mixtures, the simpler our dishes, the more efficient digestion can be expected."
