Apples in soft caramel recipe. Caramel apples

I’ve long wanted to make caramel apples on a stick for my daughter: it’s both delicious and healthy! To make the delicacy look more elegant in plates, choose small fruits and remember that caramel is viscous, and therefore it will still reach for the apple. But if you want to get a shiny top sweet layer on your dessert, then cook not caramel, but regular sugar syrup, without letting it change color. You can add any dyes to this syrup: red, green, blue and your apples will become multi-colored. When preparing a dish for this dessert, your apples will be rosy and caramelized!

I recommend choosing sour or sweet-sour varieties of fruit, so that when you combine them with sweet-salty caramel, there is simply an explosion of flavor in your mouth. My apples tasted like pineapples - it was something incredible!

So, let's prepare all the ingredients and start cooking!

First of all, rinse the apples in water and pat them thoroughly with a waffle or paper towel, getting rid of moisture, since caramel will not stick to a wet surface!

Pierce each fruit with a wooden kebab skewer. You can also use wooden ice cream sticks.

Pour granulated sugar, salt into a cauldron or saucepan, add lemon juice or citric acid and water. Place the container on the stove and bring its contents to a boil. Lemon juice is an important component; it prevents sugar from crystallizing, and you will be sure that your syrup will definitely turn out the way you imagined it. As soon as the syrup bubbles change their color to brownish, remove the container from the heat.

Pour in the cream and stir immediately, making sure it is thoroughly incorporated into the syrup.

While the caramel is hot, we will dip the apples on skewers into it and place them on a stand so that the excess caramel drips off. Let's do this with all the fruits. As soon as we finish, we start again with the first apple, dipping it into caramel a second time. So to speak, we will apply a second layer, etc., until our sweet and salty sauce is gone. Place the dessert in the cold for about 20-25 minutes.

As soon as the caramel hardens, becoming slightly viscous, transfer the apples to a dish or plate.

We will serve apples in caramel on a stick for dessert. If desired, you can sprinkle the caramel with almond or nut crumbs, grated chocolate, multi-colored sprinkles - it all depends on your imagination!

Caramelized apples - a recipe for haute European cuisine, which is used not only by professional cooks, but also by ordinary housewives.

There are many variations in the preparation of this dessert. We will consider the most common options below with mandatory step-by-step instructions.

Everything can be caramelized: both a whole apple and fruit slices. It all depends solely on the recipe you decide to follow.

If it is necessary to caramelize the slices, the apple must be prepared. To do this, the peel of the fruit is carefully cut off, the center is cut out and it is cut into even, identical pieces.

If you cook a whole apple, it is recommended to choose a medium or small sized fruit. You cannot use grated or blended product.

If desired you can caramelize the slices. Moreover, in this case it is better to select varieties with a slight sourness. Although you can use whatever you have on hand.

Required Ingredients

The required ingredients for caramelization are the apples themselves, butter and sugar. Plus, you can use various spices, for example, cinnamon and vanillin.

The proportions of using one or another component depend solely on the method of preparing caramel and baking apples.

If you need to completely cover them with caramel sauce, you will need more ingredients. If you just need to fry the pieces, then use less.

Talk about what the described proportions must be strictly observed, it is forbidden. Everything is considered approximately. And if this is half a kilogram of apples, then you can simply prepare several medium-sized fruits.

    And to do this, you don’t have to spend a lot of time in the kitchen or buy expensive ingredients. Everything you need is simple use the recipes above and prepare a treat!

    Fast food is now more common than ever. This is due to the general employment of the population, which wants to get everything as quickly as possible, literally “on the run.” Owners of fast food outlets are happy to help them with this - they try to offer something new and interest potential customers. These include hot dogs, corn dogs, cone pizza, falafel, and shawarma... However, in most cases, the emphasis is on unsweetened, rather heavy and high-calorie foods. What about children? It is they who, in most cases, serve as the “engine” of trade - parents are ready to indulge in the name of their contentment and their peace of mind.

    For such cases, trays with loose ice cream are provided, but is this enough for the spoiled public? In addition, the composition of ice cream is not always pleasing - parents are inclined to refuse the child if they consider the treat harmful to his health.

    A new trend - caramel apples - is just beginning to gain popularity on the Russian market. Surely everyone has seen this dessert more than once in American films. The appearance and composition of this dessert can attract both children and adults, plus, this type of product looks very fresh against the backdrop of boring fast food.

    A little history

    Caramel apples appeared in the Far East due to practicality - the fruit needed an increase in shelf life. Otherwise, there would simply be nothing to trade - the product would not survive the long delivery period. As everyone knows, sugar is a preservative; it helps preserve food longer. From the East, apples migrated to Europe, and from there to America, becoming a cult dish.

    Over time, the recipe underwent changes - the caramel became softer and less crunchy, which simplified the process of eating. Today, these apples are no less impressive than donuts, thanks to their decoration and presentation.

    Prospects and features

    By and large, caramel apples (photo) consist of whole fruit of the correct shape on a wooden stick, sugar, sugar syrup and water. Well, sprinkles. Moreover, there is very little sugar itself, since the syrup envelops the apple with a thin layer, simply adding flavor.

    The apple itself is practically not subjected to heat treatment. When purchasing a treat, people end up simply eating fresh fruit. Hence, there is no heaviness in the stomach, minimal contraindications and even benefits.

    The advantage is that these apples are nowhere to be found now - entrepreneurs underestimate their potential, because production is too simple, as is the finished product. Also, the benefit is that caramel apples will be most popular in street trading conditions. That is, you won’t have to pay a lot of money to rent the premises.

    However, this is a double-edged sword - sales on the street are seasonal, that is, apples can only be sold in the warm season.

    The cost of one such apple is a maximum of 10-12 rubles, while the retail cost is a minimum of 50 rubles. If you get good at cooking and provide customers with a high-quality, tasty and beautiful product, then the initial costs will pay off very quickly.

    Equipment

    In order to cook apples, it is enough to purchase the following list of equipment:

    China or not China?

    In the process of choosing equipment, everyone is guided by the same principle - cheaper, but better quality. The most “close to the people” in terms of price tag are the Chinese-made items. Further, in increasing order - Russia and the USA. What should I do? Let's look at the pros and cons.

    • China. Inexpensive, but the pig is in a poke. This equipment can work for years or begin to give problems within a couple of months. Subject to repair and service. According to general statistics, it survives the season without any problems.
    • Russia. More expensive by 15-20% on average. Warranties and spare parts. On average it lasts 1-2 years.
    • USA. At least 50% more expensive than Chinese equipment. The average service life is 5 years.

    Principle of operation

    How to cook caramel apples? A business based on them does not require any special knowledge or chefs, since the cooking process is outrageously simple. We will describe it as completely as possible.

    Reviews and place on the market

    Of course, it’s scary to start something new, not particularly known to the general public, but the “Caramel Apples” business has very positive reviews. This is due both to the unfamiliarity of the treats on the Russian market, and to the general love of people for food and entertainment.

    According to entrepreneurs, fruits are in demand in places where idle people gather. These are all kinds of squares, fairs, festivals and parks. They are especially good because there are always a lot of children there. And what parent can resist a request to buy not chips, not a hot dog, but such a healthy and tasty apple, even with a little sugar on top?

    The product is also in demand in catering. This word refers to catering for events, or more precisely, providing food. Mobile caramel apples are a business for not very rich, but promising and sociable people.

    Homemade caramel apples

    What if you want to please your family with apples? You can’t buy a set of equipment for this, right? You can do it on your own. To make this treat at home, you will need the following products:

    • apples (preferably sweet and sour for contrast) - 3 pieces;
    • white sugar - 200 grams;
    • water - 25 grams;
    • corn syrup (or glucose syrup) - 70 grams;
    • wooden sticks for shish kebab - 3 pcs.;
    • optional - sprinkles, food coloring (for more shockingness).

    Process description

    Making caramel apples starts with the apples themselves. Wash and dry them, stick them on sticks. Set aside.

    Mix sugar, syrup, water and coloring (if adding it, a couple of drops will be enough) in a heavy-bottomed saucepan. Cook over low heat until the sugar dissolves.

    Increase the heat to high and, without stirring, bring the caramel to 130 degrees. Remove from the stove as it will start to burn. Immediately dip the apples into the caramel one at a time, turning the stick along its axis until an even, smooth caramel coating is achieved. Make sure the caramel is not too thick. Otherwise it will be difficult to eat. While the caramel is soft, you can roll it over the sprinkles. To do this, it is better to take something appetizingly crunchy, such as toasted nuts. Let cool completely and here they are - caramel apples! Reviews and delight from loved ones will let you know that you made the right decision.

    It is believed that Chinese caramel apples are the recipe that was invented first. Pieces of fruit prepared in this way can often be found on the menu of oriental restaurants. They are first deep fried and only then coated with a sweet, glossy glaze. This dish looks simply amazing, and the taste will satisfy any gourmet.

    Ingredients:

    • white sesame – 40 g;
    • eggs – 2 pcs.;
    • sesame oil – 70 ml;
    • flour – 200 g;
    • honey - 2 tbsp. l.;
    • water – 120 ml;
    • sugar – 350 g;
    • apples – 6 pcs.;
    • lemon juice – 2 tbsp. l.;
    • vegetable oil – 800 ml.

    Cooking method:

    1. Beat the eggs, gradually adding water and flour. The resulting batter should be homogeneous, reminiscent of pancake batter in thickness.
    2. Wash and dry the fruits, remove the peels. Remove the core and cut into slices.
    3. Dip the slices in batter and fry in hot vegetable oil. Place them on a paper napkin to absorb excess fat.
    4. Heat sesame oil. Pour sugar into it, add honey. Cook, without stopping stirring, over low heat. Halfway through, add lemon juice and sesame seeds.
    5. Prick the apple slices with a skewer, dip them into the syrup, and then into ice water for a couple of seconds.
    6. Place the dessert on a plate greased with olive oil and serve.

    Remember a few culinary tricks:

    1. Liquid chocolate will help make caramel apples even more beautiful. Using a pastry syringe, draw openwork patterns on the fruit.
    2. It is recommended to glaze small fruits; even the ranet variety will do. They will be convenient for children to eat.
    3. The colder the fruit, the faster the glaze will set on it. In this case, it is better not to completely remove the caramel from the heat, but to transfer it to a water bath so that it does not begin to harden.
    4. If a recipe calls for corn syrup and you don't have that ingredient, replace it with starch mixed with a little water.
    5. Keep the heat low when melting the sugar. Then the glaze will be uniform and smooth, with a beautiful shine. If the mixture boils while there are still grains in it, the coating layer will completely lose its gloss.
    6. If you need to store the dessert for some time, wrap each fruit in foil or parchment and place it in the refrigerator. Keep them like this for no longer than five days.
    7. Try to make enough syrup to cover several layers of frosting.
    8. If the mass is too thick, heat it in a water bath.

    The fruits should be thoroughly washed under warm water, then the stalks should be cut out and short (7-8 cm) wooden twigs or ice cream or sushi sticks inserted into their base. Then the frozen apple can be eaten like a lollipop. After drying, the fruits are ready for caramelization.

    Now let's talk about the batter that caramel apples require. Its recipe is as follows. For 6 apples you will need 150 g. sugar, 8 tbsp. l. water, as well as about 1.5 tsp. vanillin. Mix sugar and water in a saucepan and, stirring, bring to a boil over low heat. The caramel is cooked when the mixture has reached a golden brown color. At the end of the cooking process, add vanilla to the pan and stir. An alternative version of the batter is to melt the toffees (about 300 g) in a water bath with the addition of 1.5 tbsp. l. water.

    Now let's move on to caramelization. Each apple, holding it by the stick, must be dipped into caramel, then into ice water, and then again into batter. When using toffee caramel, immersing the fruit in water is not required. Now all that’s left to do is let the batter dry, transferring the fruits onto a tray. When it hardens, you can taste the delicacy. Caramel apples are ready!

    There are many ways to add variety to the flavor that caramel apples are famous for. It’s easy to come up with a recipe yourself, adjusting it to your preferences. If you use your imagination, you can invent a completely new way of making caramel apples. So, you can add chopped nuts, popcorn, and confectionery powder to the dish. To do this, you need to sprinkle the selected ingredients over the omitted ones before it hardens. You can use melted chocolate instead of caramel (or in addition to it). Another creative solution is color additives that need to be mixed into the caramel in advance. Then the apples will delight the eye with their cheerful colors. Bon appetit!
