Cottage cheese baked goods - roll

Olga writes:

I love making baked goods, especially curd and cheese baked goods, when the dough is made quickly.
I love cottage cheese for its softness and taste, and cheese for its slight layering and also, of course, for the taste of cheese.

I think Olga will share her baking recipe with us, and today we offer you no less interesting recipes:

Curd dough

Compound:

  • 2 cups (250 ml each) flour
  • 1 teaspoon of soda (without a slide)
  • 200 gr or 8 tbsp. spoons 9% cottage cheese (with a slide)
  • 50-100 grams of sugar (to taste, depending on the sweetness of the filling)
  • 5 tbsp. spoons of sunflower oil
  • 4 tbsp. spoons of curdled milk (kefir)

Curd dough - recipe:

The higher the fat content of the cottage cheese, the more crumbly it will be.dough.
If the cottage cheese is coarse-grained, you can put it in the freezer overnight the day before, then the next day the thawed cottage cheese will be more crumbly and smaller. This procedure will save you from preliminary rubbing the cottage cheese through a sieve.

Compound:

  • 1/2 part curd dough

Filling:

  • 3 tbsp. spoons of raisins
  • 1/2 banana (or 1 mini banana)
  • 1 tbsp. spoon of sugar (or to taste)

Cottage cheese bagels - recipe:

Curd roll with apples and dried fruits

Compound:

  • 1/2 part curd dough

Filling:

  • 2 tbsp. spoons of dried apricots
  • 2 tbsp. spoons of prunes
  • 1 large apple
  • 2 tbsp. tablespoons sugar (or to taste)
  • at least 50 ml water

Curd dough roll - recipe:

  1. For the roll, prepare a delicious filling and dried apricots with prunes (the total volume of dried fruits is approximately 100 ml).

    Apple and dried fruits

  2. Wash dried apricots and prunes in hot water first. If dried fruits are very dry, soak them for about 5-10 minutes to make them easier to cut.
  3. Peel the apple, cut it in half and remove the core. Cut into small pieces (it turned out to be 1.5 cups of 250 ml).

    Apples for filling

  4. Cut dried apricots and prunes into 4-6 pieces.

  5. Place the chopped apples, dried apricots and prunes in a container where they will be cooked, add sugar and a little water. (You can add more water, because the resulting syrup can then be used when cooking compote, in the recipe Cupcake with dried fruits or other recipes that contain water.)
  6. Cook until the dried fruits soften (5 minutes on average), stirring the filling occasionally during cooking. Then pour the syrup through a sieve and cool the resulting filling.

The filling for curd baking is ready

  7. Roll out the dough into a layer approximately 0.5 cm thick. Distribute the prepared filling over the entire sheet of dough, not reaching a little (about 1 cm) to the edges.

  8. Roll the dough with the filling into a roll and transfer to a greased baking sheet. To get a golden brown crust, use a brush to brush the top and sides of the roll with strong, sweet tea.

Curd dough - simple, tender, airy, universal. You can use it to make sweet rolls, bagel cookies, or savory pies with vegetables. Even a novice cook can cope with the recipe for curd dough. And the one who is not friendly with the test, too. Therefore, rolls with apricots are doomed to success, you can safely cook them.

Ingredients

  • cottage cheese - 500 grams
  • flour - 400-500 grams
  • butter - 200 grams
  • baking powder - 2 teaspoons

Preparation

Place cottage cheese and soft butter in a bowl. Mix thoroughly.

Add flour sifted with baking powder in small portions, kneading the dough. It should turn out soft, airy and not sticky. If kneading in a bowl is inconvenient, place it on a work surface.

Divide the finished dough into four parts, roll each into a ball, put in the refrigerator for at least half an hour, and preferably an hour.

Wash the apricots and pat dry. Cut into small pieces.

Since it is not sweet, roll out the dough using sugar. But before rolling out, knead the ball a little to make rolling easier. Roll out, giving it as rectangular a shape as possible into a layer 0.5 cm thick.

Turn over so that the sugar side is on top, place the filling near one edge, sprinkle with sugar and roll up, tucking the edges inward at both ends.

Gently roll the top of the roll in sugar. Place seam side down on a parchment-lined baking sheet.

Bake for 20 minutes at 190°C.

If there is a lot of filling, it will give a lot of juice, so the inside of the roll will not be fluffy. Choose what you like best: a lot of filling or dough. Both options are delicious.

In addition to apricot, you can take absolutely any fruit or berry. Sour ones can be simmered a little with sugar and butter. Cottage cheese rolls are also good stuffed with jam, marmalade, or marmalade.

The cottage cheese needs to be dry. If yours is too wet, you need to weigh it (put a clean napkin in a sieve, lay out the cottage cheese, cover with the ends of the napkin, place the sieve in a container to allow the liquid to drain).

If it’s not sweet for you, then sprinkle the cooled roll with powdered sugar (you can sprinkle each piece of the cut roll).

Do not neglect to let the dough rest in the refrigerator. Freshly prepared food is very difficult to roll out.

Store the rolls (if necessary) in the refrigerator, but remember that curd dough goes stale faster than yeast dough.

When I want to please my loved ones with something delicious, most often it’s baked goods or dessert. But at the same time, I don’t like to spend too much time on cooking, so when choosing the next recipe, I pay attention not only to the taste, but also to the simplicity of the cooking process. It's good when both of these criteria coincide!

Lately I’ve been really loving working with cottage cheese dough. It kneads quickly, is pliable, and the cookies and pies it produces are soft and fluffy. I recently made rolls from this dough with a very tasty filling of poppy seeds and raisins. At the same time, I decided to experiment with the usual recipe for cottage cheese dough and added whole grain flour to it instead of regular wheat flour. The experiment was a great success, so I suggest you prepare this wonderful pastry for your family and friends.

Ingredients

  • For the test:
  • 250 g cottage cheese
  • 1 egg
  • 1-1.5 cups whole wheat flour
  • 3-4 tbsp. spoons of sugar
  • 1 teaspoon baking powder
  • 2 tbsp. spoons of vegetable oil
  • vanillin to taste
  • For filling:
  • 100 g confectionery poppy seeds
  • 50 g raisins
  • 2 tbsp. spoons of sugar
  • 0.5 cups milk
  • piece of butter

Curd rolls recipe with photos

1. Break the egg into a bowl convenient for kneading the dough and beat it a little with a whisk along with the sugar.

2. Mix the beaten egg with cottage cheese. In order for the dough to turn out correctly, the cottage cheese should not be too wet.

3. Add dry ingredients to the cottage cheese and eggs: whole grain flour, baking powder, vanillin.

4. Knead the curd dough. To make it elastic and pliable, we hit it on the work surface a couple of times. Cover the bowl with the dough and place it in the refrigerator for about an hour.

5. Meanwhile, let's prepare a very tasty poppy seed and raisin filling. Steam dry poppy seeds in boiling water for 10 minutes.

6. Drain the liquid, place the steamed poppy seeds along with a piece of butter and sugar to taste in a saucepan and boil for several minutes.

7. Remove from heat, add raisins and beat with a blender to a viscous mass. The filling is ready.

8. For convenience, divide the risen dough into two parts, roll each part into a layer 0.5 centimeters thick.

9. Coat the layers of curd dough with poppy seeds and raisins filling.

10. Carefully roll up the roll. The curd dough is very delicate and easy to damage, so take your time.

11. Cut the resulting rolls into small rolls and place them on a baking sheet covered with parchment paper or a silicone mat. Bake in an oven preheated to 180 degrees for about 15 minutes.

12. Curd rolls made from whole grain flour filled with poppy seeds and raisins will quickly rise, brown, become soft and fluffy. Let them cool a little and invite everyone to drink tea. No one can resist such a treat!

Good day to all!

Summer has come, the first greens have begun to appear, and we need to use them more and more often in our diet. Therefore, today we will prepare pies-rolls from cottage cheese dough stuffed with greens.

Pies - rolls made from curd dough stuffed with herbs.

Each green blade of grass in our garden has a certain set of vitamins and is useful in its own way. Traditionally, we prepare various salads from greens and add them to various dishes as a seasoning. And today the greens will serve as a filling for pies.

Recipe for curd dough for pies or rolls.

I took the recipe for curd dough for rolls the same as for. And the cooking process is the same. I won't repeat myself. Look. But I’ll write about the filling.

Herb filling for pies or rolls.

For the filling we take a lot of fresh herbs - a large bunch of dill, young green onions, spinach and sorrel leaves, parsley. The proportions are arbitrary.

Greens for filling pies

A few sprigs of garden thyme or, in other words, savory will add a special piquancy to the taste. If woodlice gets in with the dill, don’t throw it away either. Young, it is very healthy and tasty.

So, wash all the greens, then cut them. Melt a piece of butter in a frying pan and add herbs one by one - first onion, then spinach, parsley, dill, a few sorrel leaves. Let everything lightly simmer so that the greens soften and settle, and at the very end add salt.

In this recipe I do not add any spices, all the herbs are spicy and already contain a lot of essential oils that add aroma.

To the cooled green mass add 4 hard-boiled and chopped eggs and 2-3 tbsp. l. boiled fluffy rice. Cut the eggs into cubes.

Mix everything and our filling for the rolls is ready.

Roll out the dough, add the filling, roll it up and cut it into pieces one and a half to two centimeters thick. Lightly flatten these rolls on a board sprinkled with flour and fry in vegetable oil until golden brown. The roll pies are prepared quickly and eaten even faster.

You can also form traditional pies, cut out circles, put the filling, pinch the edges and fry them too. But with rolls it turns out faster and more interesting.
